Panko is a Japanese breadcrumb that is used to prepare meat, seafood or vegetables, and also is used in poultry stuffing to give it a nice texture. Panko is much fluffier and looser than regular breadcrumbs. During cooking, it forms a delicious, crispy crust. It is also used to thicken sauces and soups, as a binder, and to add texture to sweet dishes. Panko differs from regular breadcrumbs as it is made from a special type of white bread (usually without crust) that is processed into large flakes and then dried. Therefore, the panko flakes have the same consistency, are lighter, especially crispy and do not absorb as much fat during the cooking process as regular breadcrumbs. Dip meat, fish or vegetables in beaten egg, then cover in panko breadcrumbs. Pan fry or deep fry.
