Glutamic acid may be naturally found in various products (naturally fermented soy sauce, tomatoes, sea algae, ripened cheese, and others) and it imparts Umami (the fifth taste).
Artificially produced monosodium glutamate is in the form of almost transparent flakes. It does not have a pleasant taste, but as soon as it is added to food, it enhances the flavour of all ingredients. It may be added to meat, fish, vegetables, sauces, soups, and marinades. Delicious taste may only be achieved by adding monosodium glutamate in moderation.
